Easy White Cake Recipe


Birthday Cake

This wonderfully delicious white cake recipe produces amazing results in a hurry. Use it as a birthday cake, try the lazy daisy topping, or turn it into strawberry shortcake.







Tip: If you want to make this a little bit more healthy, try using half whole wheat flour, or all whole wheat flour. I grind my own wheat and use all wheat flour. I use white wheat which gives a more mild flavor than the traditional red wheat (though it has all the same nutrition). If you are interested in trying this, I have found whole wheat flour ground from white wheat (very different from "white flour") at the local Super Wal-Mart.

Every Day Cake (Vanilla Cake)

Ingredients:

2 1/2 cups flour
1 1/2 cups sugar
1/2 cup margarine, softened or melted
1 teaspoon salt
2 eggs
1 teaspoon vanilla
2 1/2 teaspoons baking powder
1 cup milk

Directions:

Preheat oven to 350° F.

Beat all the ingredients in a mixing bowl until the batter is smooth. Pour the cake batter into a greased 9” x 13” pan.

Bake in the oven for 25 - 30 minutes.

Tip: You'll know that the cake is perfectly done when you stick a toothpick into the cake and it comes out clean. If you over bake a cake it becomes dry, so try 25 minutes first. If the cake doesn't pass the toothpick test, you can always bake it for a few more minutes.


Let the cake cool then frost with your favorite frosting or use one of the variations below.

Lazy Daisy Topping


If you like caramel and coconut, you'll love this topping. It adds the perfect caramel coconut twist to the traditional white cake recipe.

Ingredients:

3/4 cup brown sugar, packed
6 Tablespoons butter or margarine
1 1/3 cups coconut
1/3 cup milk

Directions:

In a bowl, mix the brown sugar and butter until blended. Add the coconut and milk.

When the cake comes out of the oven, immediately spread the topping over the cake.

Put the cake back in the oven and broil for 3 – 4 minutes, until the topping becomes bubbly and light brown.

We like it served warm.

Strawberry Shortcake


With little more effort than making the cake itself, you can make a wonderful strawberry shortcake. This also works well to make peach shortcake (or any other fruit shortcake for that matter).

Ingredients:

fresh fruit, sliced (strawberries or peaches work well)
whipped cream

Directions:

Cut each piece of cake in half (hamburger bun style), and fill with fruit and cream and/or top with fruit and cream.
