Easy Oven Fried Chicken Recipe
As a boy Mom always let us choose our birthday dinner. I
always choose her famous oven fried chicken recipe. Not only is the chicken
good, the country
gravy that goes along with it is amazing! To top off the meal
I would choose mashed potatoes, homemade rolls, and frog eye salad (a
sweet fruit salad with little noodles that look like frog
eyes).
I didn't realize until I got older that oven fried chicken was
not only easier to make than normal fried chicken, but healthier for
you too! Wow, does it get any better than that? Delicious... Easy...

Oven Fried Chicken

Ingredients:
3- 4 pond chicken pieces (skinned thighs and drumsticks or
boneless skinless breasts)
1 cup flour
1 teaspoon season salt
1/2 teaspoon salt
dash of pepper
2-3 Tablespoons butter
Generous sprinkle of:
garlic powder
onion powder
paprika
poultry seasoning
Directions:
Preheat oven to 450° F
Melt the butter in a pan (a darker pan or broiler pan works best).
Combine flour and spices in a bowl and dip the chicken pieces in it to
coat them well. Place the chicken in the pan with the butter. Bake for
35-40 minutes, then turn them over and bake for another 10-15
minutes. Warning: if your chicken pieces are very thin, you will
need to reduce baking time to keep the chicken from burning (25-30
minutes on the first side and 5-10 minutes on the second side).

For a more crispy chicken you can then
turn the broiler on for 2-3 minutes longer. |
