This recipe works great with whole wheat or white
flour.
Ingredients:
|
5 Loaves:
1/2 cup warm water
2 1/2 Tablespoons yeast
5 cups hot water
2/3 cup oil
2/3 cup honey
1 1/2 Tablespoons salt
14-15 cups whole-wheat flour
2 Tablespoons dough enhancer, optional
(add with the flour)
|
6 Loaves:
2/3 cup warm water
3 Tablespoons yeast
6 cups hot water
3/4 cup oil
3/4 cup honey
2 Tablespoons salt
17-18 cups whole-wheat flour
2 1/2 Tablespoons dough enhancer,
optional (add with the flour)
|
Directions:
Stir the yeast into the warm water and set it aside
for 5 minutes.
Put
the hot water, oil, honey, and 8 cups of flour in a large bowl and mix
until it is well blended and smooth. (If you do not have a bread
mixer-- like a Bosch or Kitchen Aid-- you can use a hand mixer for this
part.)
| Tip:
If you put the oil in first, the thin layer of oil
that remains in the measuring cup will help the honey to come out more
easily. |
Mix
in the yeast, cover the bowl, and let it sponge (just let is sit and
let the yeast start working) for 30-60 minutes, stirring the dough down
about every 15 minutes. (You may skip this step if you are in a hurry,
but your bread will be lighter and fluffier if you let it sponge.) Add
the salt, dough enhancer, and more flour, 2-3 cups at a time, mixing well with each
addition. Add until the dough is no longer sticking to the sides of the
bowl. (If you are making the bread without a bread mixer let it raise 30
minutes and then continue.)
Turn the dough out on a floured surface and divide it into 5 or 6 loaves
depending on which recipe you used.
| Tip:
When shaping your bread, it helps if you have a
little baking oil on your hands. |
Knead
each loaf a minute until smooth. Place each loaf into a greased 8 1/2" x 4 1/2"
pan and loosely cover with a cloth or with plastic wrap and let it
raise until the loaf is 1/2 - 1 inch over the top of the pans. Bake at
350° F for 25 minutes.
| Tip:
If you use butter flavored
cooking spray you can also spray the tops with it, or you can use
regular cooking spray for the pan and rub vegetable oil all around the
loaves. |
