Easy Zucchini Bread Recipe



If you're looking for a great way to get your kids to eat some veggies, this easy zucchini bread recipe ought to do the trick. I've never seen a child that didn't enjoy a slice of fresh zucchini bread!

I love to cut a huge piece of this (maybe 2 inches thick) and eat it with a big glass of milk for breakfast. It is also good when you butter it.

The interesting thing about zucchini bread is that the crust is the best part. With most types of bread, nobody wants the heal. With zucchini bread, everybody fights over the heal. Funny how things work;)

Zucchini Bread

Ingredients:

1/3 - 1/2 cup oil
3 eggs
2 cups zucchini
1 1/4 cups sugar
1 Tablespoon vanilla
1/2 cup applesauce
3 cups whole-wheat flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoons baking powder
1 teaspoon cinnamon
1/2 – 1 cup chopped nuts

Directions:

Blend the oil and the eggs in the blender, then add the zucchini until the mixture is 2 cups higher than it was before you added the zucchini. Blend and then set aside.

In a mixing bowl stir the dry ingredients together and add the zucchini mixture. Stir in the nuts. Pour into 2 greased 8 1/2” x 4 1/2” bread pans. Bake for 40 – 45 minutes.

Tip: Rubbing the top of the bread with a small amount of butter after it is done cooking gives the crust an even better flavor. Of course, this adds more calories too.
