Easy Shrimp Scampi Recipe
This easy shrimp scampi recipe makes a great meal
with little preparation. It produces an elegant and very tasty dish in
no time at all.
Scampi is actually an Italian word for a certain type of lobster.
However, in the culinary world (in the United states) it has come to
mean shrimp, or it refers to the way the sea food was prepared. I have
also recently seen "Chicken Scampi" in Italian restaurants. The
"scampi" method of preparation involves sauteing shrimp (or other
meats) in olive oil (or butter) and garlic. Many recipes also sprinkle
the top with lemon juice and many recipes include vegetables.

Shrimp Scampi

Ingredients:
1/2 cup olive oil
1 tablespoon minced garlic
1 1/2 to 2 pounds shrimp, peeled and deveined (or chicken)
1/2 cup minced parsley
1 Tablespoon fresh lemon juice salt to taste vegetables such as sweet onions, peppers, etc. (optional)
Directions:

To make a low fat version, use
only 1/4 cup of oil (or just a few tablespoons). Please note that if
you serve this over noodles, the noodles will be a little dry. This can
be compensated by adding a sauce to the noodles. For example a thin
Alfredo sauce, or a can of cream of chicken soup mixed with a can of
milk, a half cup of Parmesan, a dash of Italian seasoning, and salt to
taste. |
Cook garlic and oil in skillet over very low heat
until garlic is golden brown.
Add shrimp (or chicken) and cook on medium high heat. Half way through
cook time, add parsley and vegetables and continue cooking until shrimp
is done (it will be firm and pink).
Sprinkle with lemon juice and salt to taste.
Serve with bread or serve over hot pasta (such as angel hair). Sprinkle with Parmesan if desired.
