Easy Fruit Pizza Recipe

This very easy fruit pizza recipe makes great use of your fresh fruit. It is a light dessert that rounds off any meal.

Health Tip: Fruit based desserts are a great way to satisfy your sweet tooth while getting essential vitamins and minerals.

Fruit Pizza

Ingredients:

sugar cookie(s)
whipped cream
cream cheese (optional)
fresh fruit

You can really use any fresh fruit that you want. Some examples of fruit that is especially tasty on these dessert pizzas include: pineapple, kiwi, strawberry, banana, or mango. You can also do themes such as tropical fruits (mango, guava, papaya, pineapple, etc.), melons (cantaloupe, honeydew, etc.), or berries (strawberries, blackberries, blueberries, etc). The great thing about fruit is that it is hard to come up with a "bad" combination.

To make this especially good try to find the freshest fruit you can. Also, make sure the fruit is ripe.

Directions:

Make your favorite sugar cookie to use as a crust (see tip above).

Tip: You can do one large sugar cookie for your crust and cut it like a pizza, or you can do many smaller individual serving sized cookies.

Blend 2 parts whipped cream with 1 part cream cheese (optional). Spread whipped cream mixture over cookie.

Top with fresh fruit. Many people like to make designs with the fruit (think of it as art, see how pretty or fun you can make it).

Refrigerate it if you are not going to serve it right away.

Sugar Cookies

Health Tip: Cut back slightly on the sugar and try replacing some of the butter with apple sauce. For example, use only 2 3/4 cups of sugar, 1 1/2 cups of butter, and 1/2 cup of apple sauce. This will reduce calories without sacrificing taste.

Ingredients:

2 cups butter
3 cups sugar
6 eggs
1 Tablespoon vanilla
8 cups flour
1 Tablespoon baking powder
1 teaspoon salt

Directions:

Cream butter, slowly add sugar. Add eggs and vanilla and mix well.

Add dry ingredients and mix well.

Roll out on floured surface to 1/4 inch thick and cut out desired shapes (or make balls and flatten with a glass dipped in sugar).

Bake at 400° for 7-9 minutes on a greased cookie sheet. Cool slightly before removing from cookie sheet.

Frost or decorate if desired.
