Easy chocolate dessert recipes to die for!



Just the phrase "easy chocolate dessert recipes" makes your mouth water doesn't it? This recipe is for us chocolate lovers!

When my wife and I got married, we took a cruise to Mexico for our honeymoon. Every night we ate in their fancy restaurant. We tried all kinds of gourmet food, but every night we ordered the same dessert, "chocolate melting cake" (also known as volcano cake). It is a very rich chocolate cake with a melted chocolate center. It is served hot with vanilla ice cream. When I got home, I had to look for a similar recipe (one of the best easy chocolate dessert recipes for sure)! This is what I found...

Chocolate Melting Cake

Ingredients:

2 (8-oz.) packages semisweet chocolate squares, coarsely chopped
1/2 cup butter - do not use margarine
5 large eggs, separated
1 tablespoon vanilla extract
1/4 cup sugar
Unsweetened cocoa powder (used to "dust" the pan)

Directions:

Grease ramekins with a little bit of butter. Then sprinkle them with cocoa powder (it's easiest to put a few tablespoons in and swirl the dish to coat the sides, then dump out the excess).
 

Tip: If you don't have ramekins, you can use any small oven safe baking dishes. Get creative. You could even use a muffin tin. (Though they'll fall apart when you try to get them out! but they'll still taste just as good.) I've also made this recipe just using a pie plate.


Whisk together egg yolks and vanilla in a large bowl. Set aside.

Tip: The easiest way to separate eggs is to crack them into a bowl and remove the yolk from the whites with a spoon. Be sure to do it gently so you don't break the yolks.


Melt the chopped chocolate and butter in a heavy saucepan over low heat, stirring until smooth. Gradually pour warm chocolate mixture into the egg mixture in the large bowl, whisking until well blended.

Beat egg whites at high speed with electric mixer until soft peaks form. Gradually add sugar, beating until sugar dissolves and stiff peaks form.

Tip: When I beat egg whites, I like to use the whisk attachment to my electric hand mixer.

You will know that you have <b>soft peaks</b> when you lift your beaters and you can start to see a mark in the eggs where the beaters were.

You have <b>stiff peaks</b> when you pull your beaters out and it forms very rigid distinct peaks.


Fold one-third of the beaten egg white mixture into chocolate mixture; gently fold in remaining egg white mixture just until blended. Spoon batter into prepared pan, spreading evenly.

Tip: Folding the eggs is the hardest part. If you have never folded eggs before read this great article to learn how.

Bake at 375 degrees for 25 minutes. (Do not over bake!, the center will still be a little runny this will serve as the melted chocolate center.) Let stand in pan on a wire rack 10 minutes.

Sprinkle with powdered sugar and serve hot with ice cream!

Another of my favorite easy chocolate dessert recipes is turtle waffle cookies. My first semester in college, I copied down a few of my favorite recipes onto a sheet of paper. That was my "recipe book". One of those recipes was for turtle waffle cookies. After I made them once, my roommates kept bugging me to make them again and again. It got to the point that everybody knew that every Sunday evening I was going to make turtle waffle cookies and everybody just showed up. I usually didn't know half the people that showed up, but I didn't mind because I was single and interested in meeting girls (and my cooking skills impressed them).

Eventually, I decided that I needed to teach my roommates how to make them. Jake who never had the patience or the knowledge to cook, became the turtle waffle master. He could whip up a batch in no time at all. If Jake could master it, it has to be an easy chocolate dessert recipe!

Turtle Waffle Cookies

Ingredients:

Cookies
2 eggs, beaten
3/4 cup sugar
1 cup flour
1 teaspoon vanilla
1/2 cup melted butter
6 Tablespoons cocoa
Frosting
1/2 cup softened butter
5 Tablespoons cocoa
1/4 cup milk
1 teaspoon vanilla
3 cups powdered sugar

Directions:

Add all frosting ingredients to mixing bowl and beat until fluffy and lighter in color.

Turn on waffle iron.

Mix cookie ingredients in order given.

Spray waffle iron well with butter flavored cooking spray. Drop by spoonfuls onto waffle iron on medium heat. Cook about 1-2 minutes. Remove from waffle iron with a fork and frost with chocolate frosting while cookies are still hot.

Tip: If your waffle iron has more than one heat setting, turn it to medium. This will help so you don't burn the cookies.

I often have people ask me how to tell if a cookie is done. As soon as you can lift it out of the iron with a fork, it is done.
