Easy Chicken Parmesan Recipes

If you are looking for easy Chicken Parmesan recipes, you've come to the right place. A while back my wife watched an online movie clip for a Chicken Parmesan. She showed it to me and I thought, "that looks pretty easy". I tried it and loved it. The recipe didn't come with a marinara sauce recipe, so I invented one to go with it. I have since created my own version that makes it a little healthier and easier to make. This has turned into one of my wife's favorites out of all the easy Chicken Parmesan recipes.

Tip: When I make these easy chicken Parmesan recipes, I like to buy large high quality (lean) chicken breasts, such as Tyson chicken breasts. I then cut it in half through the middle to make 2 thinner pieces. The top piece is usually 3-4 ounces (one serving size) and the bottom is 6-8 ounces. So, I cut the bottom into 2 pieces. This gives me 3 serving size pieces out of every breast.
If you are a big eater, you can simply butterfly the chicken. To do this, cut it through the middle, but don't go all the way through. You you should be able to open it like a butterfly to make one large breast.

Chicken Parmesan: My Version

The major difference between my version and the original recipe is that I don't bread, fry, or bake the chicken. I grill it. If you want the breaded version, see the recipe below.

Ingredients:

4 (3-4 oz) chicken breasts
4 (1 oz) slices mozzarella cheese
salt
pepper
marinara sauce
Parmesan cheese

Directions:

Salt and pepper the chicken to your liking.

The best way to cook the chicken is to throw it on the BBQ grill (on medium heat if you have a gas grill). Cook on one side until it looks cooked (meat turns from pink to white). Flip and grill on the other side. When it is getting close to being done, place the mozzarella on top and let it melt. Serve hot topped with marinara sauce, then Parmesan Cheese.

Tip: If you don't have a BBQ grill or it's too cold outside, you can use the broiler on your oven (you can actually do this with any of your favorite grilling recipes). The only difference is you will be cooking from the top instead of the bottom. Due to this fact, make sure your chicken is fully cooked before you add the cheese.

Chicken Parmesan: Breaded Style

Ingredients:

4 (3-4 oz) chicken breasts
4 (1 oz) slices mozzarella cheese
2 eggs
1/3 cup Parmesan Cheese
Salt
Pepper
Flour
Bread Crumbs
marinara sauce
Parmesan Cheese

Directions:

In a bowl mix the 2 eggs, 1/3 cup Parmesan Cheese, and a little salt and pepper (more or less depending on your liking).

Put some flour on a plate. Press both sides of the chicken into the flour, then pat off the excess (do it like you were giving a gentle spanking). Make sure the chicken is fully coated.

Dip the chicken into the egg mixture to coat both sides.

Put the bread crumbs on a plate. Press both sides of the chicken into the bread crumbs, then pat off the excess (just like we did with the flour). Make sure the chicken is fully coated.

Now, there are two methods of cooking the chicken. Choose one of these methods. (The first gives you a restaurant style, the second give you a healthier, yet still tasty version).

1. Add a few tablespoons of butter to a frying pan. Fry the chicken on both sides until it looks crispy and done. Remove from fry pan. Put chicken in baking dish and top with mozzarella cheese, and marinara sauce. Bake for 15 minutes at 350° or until cheese is melted and sauce is hot. Top with Parmesan cheese and serve.

2. Place chicken on broiler pan. Broil in oven until top is cooked. Turn chicken over and broil until the other side is done. Put cheese on top and let broil until cheese is melted. Top with marinara sauce, then Parmesan cheese and serve.
