Corn Meal Mush
Corn meal mush is my favorite hot cereal. In this fast paced world of
convenience food and cold cereal, it is refreshing to slow down and
enjoy a good bowl of hot cereal. Besides, it is one of those breakfasts
that keeps you full all morning! 
Traditionally, I have always eaten this hot cereal with a sprinkle of
sugar and a little bit of milk. Over the years I have found a few
variations that I also enjoy. Here they are (in no particular order)...
- White Sugar and Milk
- Brown Sugar and Milk
- Butter and Brown Sugar
- Maple Syrup and Milk

Corn Meal Mush

Ingredients:
3 cups water
1 teaspoon salt
1 cup cornmeal
1 cup cold water
Directions:
Bring the 3 cups of water and the salt to a boil. Combine 1
cup of cornmeal with 1 cup of cold water. Gradually add cornmeal
mixture to boiling water while you stir constantly. Cook until thick.
Cover and cook for 5 additional minutes on low heat.
| Tip:
You can add one cup of milk to cooked
cornmeal so it doesn't coagulate. |
Serve with milk and sugar.
