Moist Chocolate Cake Recipe



Everybody enjoys a deliciously moist chocolate cake recipe. These recipes produce chocolaty perfection every time. Of course, I suggest topping them with a good chocolate frosting (recipe also below) or German chocolate frosting.

Chocolate Potato Cake

Chocolate Potato Cake

For those of you that have had potato bread, you know how good it is. This is the same idea. I first tried this in Florida when I was visiting my sister. I was a little bit of a pig and ate a lot. I couldn't help myself, it was just too good!

Ingredients:

1 cup butter, melted
2 Tablespoons cocoa
2 cups sugar
1 cup milk
1 cup mashed potatoes (instant potatoes work fine)
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
2 1/4 cups flour

Tip: Mom makes a healthier version by replacing half of the butter with one half cup of applesauce. She also replaces the flour with whole-wheat flour.

Directions:

Preheat oven to 350°F.

Mix all ingredients together and pour it into a greased 9” x 13” pan. Bake for 30 minutes or until a toothpick can be inserted into the middle and come out clean.

When the cake is cooled you can frost the top with chocolate or German chocolate frosting.

Wacky Cake

This super moist chocolate cake recipe is called wacky cake because it uses vinegar. It has always been a family favorite. As always, Mom made a healthier version that still tastes fabulous.

Ingredients:

Mom's Version:
3 cups whole-wheat flour
2 cups sugar
6 Tablespoons cocoa
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons vanilla
2 Tablespoons vinegar
1/4 cup oil
2 2/3 cups water
    Original Recipe:
2 2/3 cups flour
3 cups sugar
3/4 cup cocoa
2 teaspoons salt
2 teaspoons baking soda
2 teaspoons vanilla
2 Tablespoons vinegar
3/4 cup oil
2 1/2 cups water

Directions:

Preheat oven to 325° F.

Sift together all of the dry ingredients. Make 3 holes in it and put the vanilla in one, the vinegar in another, and the oil in the last. Pour water over all the ingredients and beat until the batter is smooth. Pour the batter into a well-greased and floured 9” x 13” pan, and bake for 30 – 35 minutes.

Chocolate Frosting


I love this frosting recipe because it always turns out with that perfect chocolaty taste. Too bad I can't just sit and eat frosting!

Ingredients:

5 Tablespoons cocoa
1/2 cup butter, melted
1/4 cup milk
1 teaspoon vanilla
3 cups powdered sugar

Tip: Mom makes the frosting a little healthier by using 5 Tablespoons of butter instead of 1/2 a cup.

Directions:

Tip: For best results, be sure to measure the ingredients exactly.


Beat all ingredients with a hand mixer until smooth and creamy. For thicker or thinner frosting use more or less powdered sugar.
