Easy Chicken Noodle Soup Recipe
Chicken noodle soup is just one of those foods that warms you
to the very soul. It seems to be the gift of choice for a friend that
isn't feeling well. Of course, it always makes a good wholesome meal
for the family.

Chicken Noodle Soup

Ingredients:
1 whole chicken
2-3 quarts water
1 large onion
3-4 ribs of celery
3-4 carrots, peeled and sliced
1 Tablespoons parsley flakes
1 large potato, diced (optional)
salt and pepper to taste
3-4 cups noodles
1/4 teaspoon poultry seasoning
Directions:
Chop the onion and celery and then set aside.
Remove the neck, etc, from the chicken, and discard or cook with
chicken if desired. Cook the chicken in a large pot with the water for
2 hours if it is thawed, or 3 hours if it is still frozen. The chicken
should be tender when it is done. Take the chicken out, put on a plate,
and set it aside to cool.
In the chicken broth add the onions, celery, carrots, and potatoes. Let
it simmer until the vegetables are almost tender. Add the seasonings
and then bring it to a boil and add the noodles. Let it simmer for
about 15 minutes.
While that is simmering debone the chicken.
After the 15 minutes are up add the chicken to the soup and
serve.
